Grilled Chicken Cordon Bleu Roll-upLoads of taste with minimal effort!
INGREDIENTS: - 2 large boneless, skinless chicken breasts, pounded to an even 1/4" thickness - 6 slices black forest ham - 4 slices Swiss cheese - 3 TBSP. dijon mustard - 2 tsp. Gusto's German rub - Kitchen twine |
DIRECTIONS:
1. In a small bowl, mix together the dijon mustard and German rub and set aside.
2. Place 3 pieces of ham on top of each pounded chicken piece. Place 2 slices of Swiss cheese on top of ham. Tighly roll each chicken/ham/Swiss piece tightly lengthwise, taking care to keep all ingredients tucked inside the breasts.
3.Lay two pieces of twine on a clean surface, each cut a little longer than the width of each chicken breasts. Snuggly tie each piece of twine around the chicken breast ends. (This will help keep the ham and turkey inside the breasts while grilling)
4. Baste each breast top with dijon mixture.
5. Light grill to medium-high (about 400°F)
6. Place each chicken breast dijon mixture side down over heated grill grates. Immediately brush top side of chicken breasts with dijon mixture. Grill for 5 minutes.
7. With tongs, carefully turn chicken breasts over, baste top sides with dijon mixture and cook an additional 5 minutes. Repeat step 6 once more, checking the internal temperature of the breast roll-ups after 10-12 minutes. The internal temperature should read 165°F.
8. When done, place chicken roll-ups on a clean plate and lightly tent with aluminum foil for 10 minutes before serving. Cut twine from chicken breasts before slicing. Serves 2.
