Garlic-Mayo MashedINGREDIENTS:
- 4 russet potatoes; peeled and diced into 1" cubes and rinsed - 2 garlic cloves; peeled & smashed - Table salt (for boiling water) - 1/2-1 cup chicken broth - 3 TBSP. mayonnaise (our secret-not-so-secret ingredient to amazing mashed!) - 2 TBSP. butter - salt and pepper to taste - Finely chopped (fresh or dried) Italian Chopped parsley for garnish (optional) |
DIRECTIONS:
1. Place peeled potatoes and smashed garlic into bottom of large soup pot; just cover potatoes with cold water.
2. Bring potatoes to boil over high heat on stove and add a few dashes of table salt to the boiling water. Turn stove temp. to low and simmer potatoes 20-25 minutes, until potatoes easily pierce with a fork. Indeed, almost fall apart.
3. Drain potatoes & garlic and add back to pot. Turn heat to medium and stir potatoes constantly for 3-4 minutes. (This will help dry out potatoes). Pour in chicken broth and add mayonnaise, butter, salt and pepper to potatoes. Mash to desired consistency with a potato masher or fork. If at first your potatoes look too runny, don't worry, just keep mashing & stirring. Soon the potatoes will soak up all of the chicken broth, leaving super creamy and smooth mashed potatoes! You may add additional broth, mayo, butter salt and/or pepper to your potatoes to your liking. Sprinkle parsley on top, if using.
