MEGA CHUCK CHILIINGREDIENTS: 2 lbs. quality chuck beef cut into 1/2" cubes 2 TBSP. olive oil 1 large onion, diced 4 cloves garlic, minced 1 green pepper, diced 2-3 TBSP. Gusto's Chili mix 1/3 cup tomato paste 2 cups beef broth 2-14oz. cans fire roasted tomatoes 2 cans dark red kidney beans, drained and rinsed 2 cans small red beans, drained and rinsed 1/4 cup leftover coffee or espresso 2 tsp. hot sauce 1/4 tsp. dutch cocoa powder Frozen crinkle cut french fries w/Gusto's Southern French Fry spice = or = Crushed saltine crackers Optional garnishes: Thinly sliced jalapeños Shredded pepper jack or white cheddar cheese Sour Cream Cilantro |
DIRECTIONS:
1. Heat olive oil in large dutch oven and brown chuck beef over medium-high heat. Do not crowd the pan. Brown the beef in rounds if necessary, draining fat as needed. Set beef aside on a plate.
2. Heat olive oil in same pot and sauté onion, garlic and pepper until onions are translucent, about 5 minutes. Add tomato paste and chili mix spices, stirring constantly, for about a minute.
3. Pour in beef broth, cooked beef, tomatoes, beans, coffee, hot sauce and cocoa powder
4. Bring chili to a slight boil then reduce heat and simmer uncovered for 45 minutes to 1.5 hours, or until chili has reached your desired thickness.
5. Garnish chili with shredded cheese, sliced jalapeños, sour cream and/or cilantro.
Chili serves 4-6 people.
MAKE YOUR CHILI MEGA!
MEGA #1. Bake crinkle cut fries according to package's directions and sprinkle Gusto's french fry spices over hot fries. Serve on side as a chili dipper.
MEGA #2. Crush desired amount of quality saltine crackers and mix into individual bowls of chili until thick.
Serve chili with a glass of cold milk.
