SMOKED CHILIINGREDIENTS: 2 lbs. quality chuck beef cut into 1/2" cubes 2 TBSP. olive oil 1 large onion, diced 4 cloves garlic, minced 1 green pepper, diced 2-3 TBSP. Gusto's Chili mix 1/3 cup tomato paste 2 cups beef broth 2-14oz. cans fire roasted tomatoes 2 cans dark red kidney beans, drained and rinsed 2 cans small red beans, drained and rinsed 1/4 cup leftover coffee or espresso 2 tsp. hot sauce 1/4 tsp. dutch cocoa powder 1 cup Applewood wood chips, soaked for at least one hour |
DIRECTIONS:
1. Heat olive oil in large dutch oven and brown chuck beef over medium-high heat. Do not crowd the pan. Brown the beef in rounds if necessary, draining fat as needed. Set beef aside on a plate.
2. Heat olive oil in same pot and sauté onion, garlic and pepper until onions are translucent, about 5 minutes. Add tomato paste and chili mix spices, stirring constantly, for about a minute.
3. Pour in beef broth, cooked beef, tomatoes, beans, coffee, hot sauce and cocoa powder
4. Bring chili to a slight boil then reduce heat and simmer uncovered for 45 minutes
5. Meanwhile, heat smoker to 300°F - when brought to temperature, place chili in smoker in a smoker-safe pot and cook uncovered for another 30-45 minutes.
Chili serves 4-6 people.
Serve chili with a glass of cold milk.
