Blackberry-Chipotle ChiliAs a part of our 'Winter Eats' series 2022, here is a recipe using our 2022 batch of chili seasoning!
INGREDIENTS:
3/4 tsp. kosher salt 1/2 tsp. baking soda 1 TBSP. water 1/2 lb. ground beef (85/20) 1/2 lb. ground pork 2 TBSP. olive oil 2 green peppers, medium dice 1 large yellow onion, finely diced 4 cloves garlic, minced 1/3 cup Gusto's Blackberry-Chipotle chili blend 1/2 cup water 28 oz. can diced, quality fire roasted tomatoes 1 can small red beans, drained and rinsed 1 can small pinto beans, NOT drained or rinsed |
DIRECTIONS:
Before preparing vegetables, mix together salt, baking soda and water. Thoroughly toss with ground beef and pork in a medium bowl. Set aside for 20 minutes.
Preheat oven to 300°F
Prep your vegetables then pulse 2/3 can of the diced tomatoes into a food processor (reserving 1/3 of the can of tomatoes to the side) until relatively smooth.
Heat oil in a dutch oven over medium heat. Cook peppers for 2 minutes then add onion and garlic. Cook an additional 3 minutes. Add beef and pork and cook until meat has browned (no need to drain fat). Stir in Blackberry-chipotle seasoning and cook an additional minute, stirring constantly.
Add the remaining ingredients, turn heat to medium-high and bring to slight boil. Cover pot and carefully transfer to preheated oven. Cook for 1.5 hours.
Chili will appear a little watery but will thicken slightly as it cools.
