BBQ Rub Roasted

DIRECTIONS:
Preheat oven to 450°F
1) In a small bowl whisk together olive oil and Anniversary blend.
2) Carefully loosen skin around breast and spread the rub mixture under the skin and on top of the skin.
3) Place a roasting rack in a roasting pan (or make two rings of tin foil for the breasts to sit on). Scatter vegetables on bottom of pan, then pour in wine and chicken broth or stock.
4) Set turkey on top of rack/tin foil and place in oven. Turn oven to 325°F as soon as you put turkey in oven.
5) Roast for 1.5-2hrs. or until a thermometer reads 165°F in the thickest part of the breast. If the skin of the turkey becomes too brown during cooking, loosely tent tin foil over the breast.
6) Tent breast loosely on a wire rack for 15 minutes before carving.
For an extra tasty meal, make gravy with the strained vegetable/wine liquid from the pan!
