Smoked Chicken GrinderEasy smoked chicken grinder perfect for a party or any day lunch! INGREDIENTS:
3-5 lb. chicken Olive Oil 2 TBSP. Gusto's Georgia rub Alabama White Sauce: 1 cup mayonnaise 2 TBSP. apple cider vinegar 2 TBSP. water 1.5 tsp. yellow mustard 1 TBSP. Gusto's Anniversary blend 2 garlic cloves, grated 1 tsp. prepared horseradish Other: Grinder (Hero/Hoagie/Sub) rolls, buttered and toasted Dill pickle slices Roma tomatoes Shredded iceberg lettuce |
DIRECTIONS:
Heat smoker to 275°F (We used a mix of wood charcoal, oak and hickory wood)
Rub small amount of olive oil over chicken, then liberally apply Georgia rub.
Smoke for 2-3 hours (depending on smoker using) or until internal temperature in breast reaches 160°F. Allow chicken to rest/cool for 10 minutes then shred, making sure to add some of that crispy skin into the mix! (TIP: Sprinkle a little more Georgia rub into the shredded hot chicken for a big burst of flavor!)
While chicken is cooking, make the Alabama white sauce by combining all of the ingredients in a mason jar with a tight fitting lid. Shake vigorously until all ingredients are combined. Set aside in refrigerator.
On your grinder roll: Spread some Alabama white sauce on top and bottom of bun. Layer chicken, tomatoes, shredded lettuce and pickles. Eat!
