BACON-WRAPPED CABBAGE STACKSIn less than hour, these irresistible cabbage stacks can be on your table, ready to eat!
INGREDIENTS: 1 head green cabbage, cored and quartered 1 small sweet onion, quartered and separated into layers 4 TBSP. Gusto's Memphis rub 2 TBSP. olive oil 1 lb. medium-thick cut bacon Toothpicks |
DIRECTIONS:
Preheat smoker to 250°F (we used a small amount of applewood for smoking the cabbage)
Carefully separate a layer towards the bottom of one part of the quartered cabbage and place an onion petal between the layers. Do this several times on each cabbage quarter, making sure to keep the cabbage's shape. Sprinkle olive oil all over the cabbage quarters then generously dust the cabbage pieces with the Memphis rub.
Lay the bacon down on a piece of wax paper in an "X" pattern (or make an "asterisk" pattern if more bacon is desired). Place cabbage in the middle of the bacon and bring each piece of bacon up to the side of the cabbage. Secure bacon to cabbage with toothpicks.
Smoke cabbage stacks 40mns. to an hour, or until cabbage is tender. Move stacks to a plate to cool before consuming. Serves 4.
