Turkey ChiliWINTER EATS #2:
Not sure there's a more comforting food than chili during the cold winter months. We made this chili in the oven which means you can pop it in and forget it, instead of having to stir every few minutes. It's not as 'heavy' as ground beef chili and will warm you right up! INGREDIENTS: 1.5 tsp. kosher salt 1 tsp. baking soda 1 TBSP. water 2lbs. ground turkey (93/7) 2 TBSP. olive oil, divided 2 green peppers, medium dice 1 large yellow onion, finely diced 4 cloves garlic, minced ¼ cup Gusto’s 10-Year Blend 3 cups no or low sodium chicken stock 2-15oz. cans fire roasted tomatoes, hand crushed 1 can black beans, drained and rinsed 1 can small red beans, drained and rinsed 1-4oz. jar roasted diced green chiles 1 TBSP. chipotle sauce (or adobo) 1 TBSP. masa (or 1oz. ground tortilla chips) |
DIRECTIONS:
Preheat oven to 300°F
Place ground turkey in a bowl. Thoroughly mix together baking soda, salt and water; pour mixture over turkey and incorporate into the meat. Set aside for 20 minutes. This mixture/method will help brown the turkey while it cooks.
Heat 1 TBSP. olive oil over medium heat in a dutch oven and sauté green peppers for 3 minutes (or until tender-crisp). Remove peppers from pan and set aside. Add remaining 1TBSP. of olive oil (if needed) and sauté onions for 3-5 minutes until just translucent. Add garlic cook for 30 seconds, stirring constantly. Turn heat to medium-high and add ground turkey. As turkey begins to cook, break into bite-sized pieces with wooden spoon. Cook until turkey is mostly cooked through. Add spices and cook for 30 seconds, stirring constantly.
Add remaining ingredients (including the green peppers), stir well and bring to a slight boil. Cover dutch oven with lid and carefully place chili in oven. Cook for 1.5-2 hours, or until meat is tender. You may add a little more masa to the chili at the end of the cook to thicken the sauce, if you wish.
